Fresh garlic has a wonderful aroma and a mild flavour. If you like to use raw garlic for flavouring vinaigrette or rubbing on salad bowls, etc. then this is the best.
We first came across fresh "wet" garlic in French markets, where we would buy a bunch to bring back to the UK. Inevitably it spent some time hanging around in the car. Every time you got in you were assailed by the most wonderful aroma. I would strongly recommend this as being a far superior car smell to anything provided by dangling artificial aromas.
When first harvested it has an unappetising appearance with muddy roots and dirty discoloured outer skin, but a little work with a sharp knife will reveal its inner beauty.
